Now in its 20th year, T & PA Murray was the realisation of Tom and Philippa Murray’s dream to establish a sustainable, free-range butcher’s offering the very best in locally sourced, sustainable meat and delicatessen produce. Testimony to the success of that dream has come – among other things – in the form of a finalists’ place in Country Living’s Foodshop Awards (Best Butcher, 1999) and Tom’s selection as a judge for the Soil Association’s Organic Food Awards (2001).
Tom has worked in the meat industry for more than 40 years, when, at the age of 15, he started out in abattoirs and slaughter houses, moving on to small independent shops then major retailers. The trade then took Tom into the international arena, where he has worked on everything from small independents to major cutting and processing units across Europe, Australia, the Middle East, the Far East and North/South America. He still holds consultancy positions internationally but now focuses most of his time on his Gloucester Road business.
The Gloucester Road shop now run by Tom and Philippa Murray sees them continuing the premises’ long heritage in the meat business – according to the official deeds and records, it has been a meat shop since 1818, having seen only three changes in ownership from then to the present. Although many of the original features are understandably gone given the requirements of modern-day regulations, the original hanging rails – deeply embedded in the very fabric of the building – are still visible.
What may or may not have changed, however, is the ethos behind it all.
